Black Bear Honey is a small boutique apiary located in the center of Israel.
Most of our hives are located in a forest, surrounded by acres of Eucalyptus trees and wild flowers. As a result, our polyfloral honey, also known as wildflower honey, is derived from the nectar of many types of flowers. The taste may vary from year to year, and the aroma and the flavor can be more or less intense, depending on which bloomings are prevalent. Because of the presence of Eucalyptus trees, the color tends to be on the richer side and the flavor can have a slight herbal flavoring with a hint of menthol. The medicinal properties of Eucalyptus are well known and honey from Eucalyptus trees is a sweet additive to tea for anyone suffering from a cold.
In order to produce a larger crop, some beekeepers truck their hives around the country. although this practice does not kill bees, we feel that it adds stress to the bees as they are forced to reorient themselves to new locations and new crops without giving them a break. A beehive is like a living organism and has an equilibrium that can't be affected in a negative way without opening it up to disease. That is why we keep our hives in the same forest and allow our bees to follow the natural beekeeping calendar of peaks and valleys.

Our honey is made in small quantities by our family in Israel and is available directly from us. We are not a large commercial apiary trucking hives around the country. Our hives are all hand painted and each one is visited regularly and cared for by our family.
