Heating honey can be easier for a large commercial apiary because when honey is hot it flows faster. Over-heating honey also slows the crystallization process. But over-heating honey, above the natural temperature of the hive, removes much of the healthy things that you want in your honey.
If honey does crystallize, and they all do eventually, just place the bottle in a bowl filled with hot water for a few minutes.
